Baked chickpeas & Pita with chive and lemon mayo

Ingredients:
Chickpeas x tin
Brown onion x 1
med chopped Garlic cloves x 2 crushed Ground cumin x 1 tsp
Smoked paprika x 1 tsp
Chilli x 1 tsp
Coriander x 1 tsp
Lemon juice x squeeze
Chives x chopped
Pomegranate seeds (for garnish)
Salt x pinch
Pepper pinch
Pita bread x 2
Mayo x 2 tbsp
Method:
Gently pan fry the onion in a little oil until soft and golden. Add the chickpeas and spices along with the crushed garlic.
Remove and put in a casserole dish in a preheated oven at 180c for 10 – 15 mins.
Refrigerate for at least 10 mins to allow the flavours to infuse. Cut the pita into random triangles and bake for 8-10 mins.
While both are in the oven, place the mayo in a bowl and add finely chopped chive with a tsp of lemon juice. Mix together well. Refrigerate for at least 5-10 mins to allow the flavours to infuse.
Place the baked pita in the middle of the plate, top with the spiced chickpea mixture and dollop the chive and lemon mayo over the dish.
