HOT ‘N’ SPICY MEXICAN STREET CORN

Corn on the cob seasoned with cayenne pepper, spiced oil draped in chipotle mayo and dressed with fresh coriander and a wedge of lime

Ingredients:

½ tsp cayenne pepper
½ tsp salt
½ tsp cracked black pepper
2 tbsp olive oil
Chipotle Mayo

Method:

Add spices along with the oil to a large bowl and toss the cobs until evenly coated. Place on the griddle pan and sear until hot and slightly seared. Take out and dress with chipotle mayo.
Serve warm.
